Beet and Gorgonzola Salad with Apple and Sweet Potato Chips


Developed for Seneca Foods
Makes 4 main dish salads

12 ounces mixed lettuces or baby spinach
1 can (15 oz.) shoestring beets, drained
1 cup (4 oz.) crumbled gorgonzola cheese
1 cup walnut pieces, toasted
1 bag (2.5 oz.) Seneca Apple Chips any flavor
1 bag (2.5 oz.) Seneca Sweet Potato Chips any flavor
2 cups diced cooked chicken (optional)
1/4 cup lemon juice
2 tablespoons honey
2 tablespoons sour cream
1/4 teaspoon salt
6 tablespoons olive oil
1/2 teaspoon poppy seeds


Place lettuce or spinach on plates.
Arrange rows of beets, gorgonzola, walnuts, Apple Chips and Sweet Potato Chips and chicken (if using), over greens.
Combine lemon juice, honey, sour cream and salt in a blender, or whisk together in a bowl. Gradually add oil, blending or whisking until thick and creamy. Stir in poppy seeds.
Drizzle salads with 1-2 tablespoons dressing, or serve dressing alongside. Serve salads immediately.
